      RECIPE TITLE "Curried Spinach Stew" Author: Luigi

    • 1 -14.5oz can Diced Tomatoes with Green Chilies,
    • 1-10oz package frozen, chopped spinach,
    • 1-15oz can Garbanzo Beans,
    • 1 tablespoon minced garlic,
    • 2 teaspoons mild curry powder,
    • 1/3 cup dried, grated, unsweetened coconut,
    • 1/2 teaspoon Salt, or to taste.


    1. In a large saucepan, combine the ingredients. Bring to the boil, then cover and cook over medium heat for 5 minutes.
    2. Break up block of frozen spinach with a fork and continue cooking until spinach is cooked but still bright green, about 5 additional minutes. Stir well. Serve the stew over basmati rice.
