    Potatoes have longed played a role in Ireland's history, and there is an abundance of potato dishes in the country's cuisine. In addition to boiled potatoes and colcannon, traditional Irish dishes include champ, a mashed potato with scallions, and farl, a potato cake or bread, and boxty, a potato pancake often filled with vegetables and meat.


    • 2 pounds russet or Yukon gold potatoes
    • 1 tablespoon coarse salt
    • 5 tablespoons butter
    • 1 1/2 cups garden peas
    • 1 cup milk
    • pepper


    Peel and cube potatoes, place in saucepan, cover with water. Bring to a boil, add salt. Simmer 15 minutes until potatoes are tender. Drain. Cook peas in 1 tablespoon butter. Transfer to blender and add milk and blend until smooth. Mash potatoes. Add remaining butter and blend with pea mixture. Add pepper to taste.
