      RECIPE INGREDIENTS

    • 1/4 teaspoon(s) Cloves, ground
    • 4 teaspoon(s) Garlic, minced
    • 1/8 teaspoon(s) Cinnamon
    • 2 tablespoon(s) Extra-virgin olive oil
    • to taste Coarse sea salt
    • 3 1/2 pound(s) Chicken, whole, cut into serving pieces
    • 1 teaspoon(s) White peppercorns
    • 1/2 cup Pomegranate molasses

      RECIPE METHOD

    1. Season chicken with salt; reserve.
    2. In a mortar and pestle or food processor, mash the cumin, cloves, peppercorns, nutmeg, cinnamon, and garlic to a paste. Stir in the pomegranate molasses and oil.
    3. Marinate the chicken pieces with the sauce in a shallow bowl for 2 hours.
    4. Transfer the chicken with its marinade to a roasting pan and pour ; cup chicken stock into the pan. Roast at 350;F for about 45 minutes, adding more stock as necessary.
