      RECIPE TITLE "Pomegranate Chicken" Recipe courtesy of iGourmet Specialty Recipes

    yields serves 4 time---difficultyeasy


    • 1 tablespoon olive oil
    • 1/2 cup diced onion
    • 1/2 cup diced red bell pepper
    • 2 tablespoons minced garlic
    • 2/3 cup white wine
    • 6 cups fish stock
    • 1 pound smoked trout
    • 1 pound smoked mussels or shrimp
    • (Alternatively you could use canned shrimp, smoked baby clams and smoked oysters for ease of availability)
    • 1 1/2 cups fresh spinach, loosely packed
    • 1/4 cup Dave's Gourmet Hot Sauce
    • juice of two lemons


    In a large stock pot, heat the olive oil over medium heat. Saute the onion, bell pepper, and garlic until tender, about five minutes. Add the white wine and cook until reduced by half. Add the fish stock and bring to a low boil. Add the trout, shrimp and mussels and cook for two minutes. Add the spinach, pepper sauce, and lemon juice. Serve immediately.
