    • 1 tablespoon canola oil or unsalted butter;
    • 2 shallots, chopped;
    • 2 cloves garlic, minced;
    • 2 tablespoons lemon juice;
    • 1 tablespoon grated lemon rind;
    • 1 tablespoon minced fresh parsley;
    • 1/2 teaspoon sugar;
    • Salt, to taste;
    • Freshly ground black pepper, to taste;
    • 1 1/2 cups nonfat chicken or vegetable broth;
    • 3/4 brown basmati rice.


    1. Warm the oil or butter in a medium saucepan over medium heat. Add the shallots and garlic and sauté for 3 minutes.
    2. Add the lemon juice, lemon rind, parsley, sugar, salt and pepper. Stir in the broth and bring to a boil. Add the rice.
    3. Reduce the heat to medium low. Cover and simmer for 35 to 45 minutes, or until the water is absorbed.
    4. Remove the rice from the heat. Fluff lightly with a fork and keep covered until serving time.
