    1. For those that love to cook, using our Gourmet Pantry products, here's a tip for the kitchen. If you chop your onions near an open flame, the gaseous sulfur compounds they release into the air will burn off before they can irritate your eyes. No more crying over onions!
    2. Every great meal ends with a delicious dessert and a cup of piping hot coffee. Create a delicious after dinner Amaretto coffee by stirring 1-2 tablespoons of amaretto liqueur into a cup of strong coffee. Top with whipped cream and garnish with toasted almond slivers
    3. When serving appetizers, plan on serving four bites per person if dinner follows, or ten bites for a cocktail party. If it is a large affair, such as a wedding reception with no dinner following, plan on ten to fifteen bites.
    4. Garnishing your ham platter with sugar coated fruit looks elegant. Stir together ¼ cup water and 2 TBLS powdered egg whites. Dip assorted fruits into egg white mixture and lightly sprinkle with granulated sugar. Set aside and allow to dry before laying on platter.
    5. Lobster tails can be broiled, baked or boiled. Choose the method of preparation that is easiest for you. To broil, use the following suggested cooking times: 6 oz tails - 12 minutes, 8 oz - 14 minutes, 10 oz - 18 minutes, 12 oz - 20 minutes, 14 oz - 25 minutes. Meat is done when it becomes a solid white color.
    7. Brush the grill rack lightly with oil before using: this will prevent foods from sticking. Remove food from the grill just before it's cooked; it will continue to cook off the fire.
    8. To add a Mexican flavor to your steaks sprinkle grilled steaks (marinated in a tablespoon of lime juice) with Monterey Jack cheese and chopped fresh cilantro. Serve each steak with salsa and warmed tortillas.
    9. A variety of vegetables are a perfect accompaniment with Pfaelzer's steaks, and easy to grill too. Sliced potatoes, bell peppers, onions, corn-on-the-cob, eggplant and zuchini are great on the grill. Vegetables cook at a different rate than steaks. They will be done when they are just starting to become tender.
