      RECIPE TITLE "Pizza" Author: William "Uncle Bill", Canada

    • 6 medium size fresh tomatoes, chopped small
    • 1 Tbsp. finely chopped fresh basil
    • 2 large garlic cloves, minced
    • 1/2 cup grated Parmesan cheese
    • 2 whole 6 1/2", round flatbread
    • 1 Tbsp. olive oil
    • 3/4 cup sliced fresh mushrooms
    • 1/2 medium size sweet red pepper, seeded and diced
    • 1/2 medium size green pepper, seeded and diced
    • 3/4 cup grated Swiss cheese
    • 3/4 tsp. Italian seasoning mix


    1. Preheat oven to 450 F.
    2. In a medium size mixing bowl, combine chopped tomatoes, fresh chopped basil, chopped garlic, Parmesan cheese and gently toss to mix well; set aside. Generously brush flatbread with olive oil.
    3. Spoon tomato mixture evenly over top of each flatbread. Sprinkle sliced mushrooms and chopped red and green peppers over tomato mixture. Sprinkle generously with grated Swiss cheese.
    4. Sprinkle top with Italian Seasoning mix. Place bruschetta directly on middle rack in preheated 450 F oven and bake for 20 minutes or until cheese melts. Remove from oven and let cool for 2 minutes.
    5. Cut into serving wedges, and serve immediately.

      Uncle Bill's Tips: You can substitute mozzarella, gouda or any cheese of your choice for the grated Swiss cheese. Italian Style Gourmet Flatbread or any similar flatbreads can be purchased in most large grocery stores, or bake your own.
