RECIPE TITLE "Gwen's Sweet Potato Pie" Author: Collette, Martinez, USA

    yields8 time1 hour difficultyeasy

      RECIPE INGREDIENTS

    • 3 lbs yams
    • 1 stick of butter
    • 1 1/2 cups of sugar
    • 1 1/2 tbs nutmeg
    • 1 can evaporated milk
    • 2 eggs
    • 1 tsp vanilla
    • dash of cinnamon.

      RECIPE METHOD

    1. Pre-heat oven to 400 F.
    2. Boil yams with skins on until very soft (they should break apart easily when you insert a fork or a knife).
    3. Carefully remove skins while running yams under cold water. Beat on medium speed with mixer, stopping frequently to remove strings. Once strings have been removed, add butter and mix.
    4. Then add remaining ingredients. Make sure that you sweeten to taste and it's O.K. to be liberal with the nutmeg.
    5. Batter should be smooth and not too thin or thick. Pour batter into a 9" or 10" unbaked pie shell (brush pie shell crust with ice water to prevent burning). Sprinkle a little cinnamon on the top of the batter, then bake for 50 minutes to one hour.
    6. Insert knife in center and if it comes out clean your pie is done. Another indication your pie is done will be brown specs on the surface of the pie.
    7. Let cool for at least one hour.

    HOT! We recommend:

Pie Divider Press this aluminum pie divider onto the top of any 9" or 10" pie, quiche, or cake to score seven perfectly equal portions - then slice. A restaurant classic in dishwasher-safe aluminum, with easy-grab top handle.

Lattice Pie Roller Run this nifty lattice pie roller over dough to cut alternating rows of crust in seconds. Now stretch over the top of your pie, and voila a perfect latticework pie crust! No more cutting strips and weaving pie crust by hand. Lattice pie roller is 8" long x 5" wide.

Extra Rolling Pin Covers Set of 2 Pie crust, cookies, pasta, or biscuits will come out lighter, more tender, and flakier with this set. Set includes cloth and rolling pin cover, which absorb excess flour and prevent dough from sticking. Cotton. Cloth: 20" x 24"; cover: 14" long. Pastry Cloth Set is no longer available.

Pie Weight ChainOur 6 foot chain of weighty stainless steel balls makes all those loose pie weights obsolete! Arrange it in the bottom of unbaked pie shells for even, crisp crusts. Food-safe and easy to clean.

Baking Ring No more smoky, baked-on mess from pies and casseroles bubbling over onto the oven floor. 12" round aluminum ring fits under pans, allowing even heat distribution while catching spills. Non-stick finish. Hand wash
