      RECIPE TITLE "Gwen's Sweet Potato Pie" Author: Collette, Martinez, USA

    • 3 lbs yams
    • 1 stick of butter
    • 1 1/2 cups of sugar
    • 1 1/2 tbs nutmeg
    • 1 can evaporated milk
    • 2 eggs
    • 1 tsp vanilla
    • dash of cinnamon.


    1. Pre-heat oven to 400 F.
    2. Boil yams with skins on until very soft (they should break apart easily when you insert a fork or a knife).
    3. Carefully remove skins while running yams under cold water. Beat on medium speed with mixer, stopping frequently to remove strings. Once strings have been removed, add butter and mix.
    4. Then add remaining ingredients. Make sure that you sweeten to taste and it's O.K. to be liberal with the nutmeg.
    5. Batter should be smooth and not too thin or thick. Pour batter into a 9" or 10" unbaked pie shell (brush pie shell crust with ice water to prevent burning). Sprinkle a little cinnamon on the top of the batter, then bake for 50 minutes to one hour.
    6. Insert knife in center and if it comes out clean your pie is done. Another indication your pie is done will be brown specs on the surface of the pie.
    7. Let cool for at least one hour.
