      RECIPE TITLE "Big Mamma's Mexican Cornbread" Author: Big Mamma, Dallas

      RECIPE INGREDIENTS

    • 2 lbs. Hamburger meat
    • 1 chopped onion
    • 2 cans chopped green chilies
    • 2 pkgs. corn bread mix (dont use Jiffy)
    • 1 can creamed corn
    • shredded cheddar cheese

      RECIPE METHOD

    1. Brown hamburger with onions and green chilies. Drain and set aside.
    2. Fix cornbread mix according to directions, substituting creamed corn for milk. You may need to add a small amount of milk if mix is too dry.
    3. Add 1 can green chilies and a cup of shredded cheese to corn bread mixture.
    4. Layer hamburger mixture; shredded cheese; and cornbread mixture; hamburger mixturre; shredded cheese; cornbread mixture, and top with more cheese.
    5. Bake according to cornbread instructions until hot and bubbly.

      You may have to bake a little longer, depending on the depth of your casserole dish.
