    yields serves 6 (Recipe for sesame crackers will yield approximately 40 2 X 2-inch crackers.) time --- difficulty moderate

      RECIPE INGREDIENTS

    For the sesame crackers:

    2 1/2 ounces all-purpose flour
    2 1/2 ounces granulated sugar
    3 medium egg whites
    2 1/2 ounces butter, melted
    1 tablespoon sesame seeds
    1 tablespoon black sesame seeds

    For the dish:

    1 pound fresh buffalo milk ricotta
    1 1/2 pounds sage honeycomb
    3/4 cup sage honey

    For the garnish:
    Sage flowers

      RECIPE METHOD

    For the sesame crackers: Preheat oven to 350 degrees. In a bowl, mix flour, sugar and egg whites until combined. Add butter and whisk until incorporated. Add sesame seeds, stirring well. Spread batter on a Silpat[R]-lined sheet pan and bake until golden brown. Remove from oven and cut into desired shape. Set aside to cool.

    To serve: Arrange ricotta, honeycomb and sesame crackers on a plate; drizzle with honey and garnish with sage flowers.
