      RECIPE TITLE "Irish Potato Salad" Author: Kelly O'D.

    yieldsserves 4 to 6 time-- difficultyeasy


    1/2 cup vinegar
    1 tbsp. celery seed
    1 tbsp mustard seed
    Mix spices w/vinegar
    2 tsp. dill weed and set aside.
    4 cups of mayonnaise
    Combine and 1 cup milk set aside.
    10 -12 potatoes
    4 cans corned beef, chilled and cubed
    1 head cabbage, (about 4 cups chopped)
    1/2 cup thinly sliced onion, optional
    2 c. dill pickles, cut in cubes


    1. Cook potatoes in skin, peel while slightly warm.
    2. Drizzle vinegar combined with spices over warm potatoes. Set aside.
    3. Chop cabbage. Cube meat. Cut up pickles. Mix all.
    4. Pour milk mixture over all. Mix slilghtly. Chill. Sprinkle with paprika before serving.
