    yields Serves 2 time---difficulty easy


    • 2 lbs potatoes
    • 4 eggs
    • 12oz Kasseri or Kefalotyri
    • Olive oil
      Pinch of Oregano and Thyme
    • salt and pepper
    • flour


    1) Boil the potatoes, peel them and put through a blender.

    2) Mix the cheese and eggs with the potatoes, seasoning with herbs and salt and pepper.

    3) Shape the mixture into croquettes and lightly flour them.

    4) Heat the oil in a frying pan and fry the croquettes until golden brown.
    5) Serve with lamb or grilled fish
