RECIPE TITLE "Broiled Salmon with Mango Salsa"

serves 4 --
4 Salmon fillets or steaks
Marinade for Salmon:
- 1/4 c. chopped cilantro
- 2 garlic cloves, minced
- Juice of one lime or juice of any other citrus fruit
- 1 Tbsp. olive oil
- 1 Tbsp. honey
- ½ tsp. salt
- ½ tsp. fresh ground black pepper
Prepare Salsa first and set aside. Stir all Salmon marinade ingredients together and place in a shallow dish large enough to accommodate the salmon fillets in a single layer. Place salmon in marinade and turn to coat. Set aside to marinate for 10 minutes or up to 30 minutes. Remove Salmon from marinade and place on a broiler pan. Broil 4-6 inches from heat source for 8 to 12 minutes or until Salmon looks opaque. Let stand for 5 minutes before serving with mango salsa.
1 or 2 mangos, peeled & coarsely chopped
¼ c. chopped red bell pepper
¼ c. chopped green bell pepper
¼ c. chopped red onion
2 small tomatoes, peeled, seeded & coarsely chopped
2 small kiwis or other seasonal fruit, coarsely chopped
Juice of 1 lemon or lime, or other citrus fruit
1 small jalapeno chopped (or to taste)
¼ c. chopped fresh cilantro
Salt & Pepper to taste
Stir all salsa ingredients together and set aside to allow flavors to blend.
