    More than a shopper's haven, the night markets of Thailand are also a food lover's paradise. There is so much to see and so much to eat. The perfect food is something that allows you to walk around and eat at the same time. I have the ultimate suggestion -- meatballs on skewers. These Thai-style beef meatballs are so good they might stop you dead in your tracks!

      RECIPE INGREDIENTS

    6 (8-inch) bamboo skewers

    Glazing Sauce
    2 tablespoons char siu sauce
    1 teaspoon chile garlic sauce

    Meatballs
    2/3 pound ground beef
    1/2 cup finely chopped cilantro leaves
    2 tablespoons finely chopped shallots
    1 teaspoon minced garlic
    1 teaspoon minced ginger
    1/2 teaspoon minced fresh Thai chile
    1 tablespoon oyster-flavored sauce
    2 teaspoons soy sauce
    2 teaspoons fish sauce
    2 teaspoons sesame oil
    2 teaspoons palm sugar or brown sugar
    2 teaspoons cornstarch
    1 teaspoon coarsely ground green or black peppercorns
    1 small green bell pepper, seeded and cut into 1-inch squares
    1 small red bell pepper, seeded and cut into 1-inch squares

      RECIPE METHOD

    # Soak skewers in water for at least 15 minutes.
    # To make glazing sauce, in a bowl combine char siu sauce, water, and chile garlic sauce. Mix and set aside.
    # To make meatballs, in a large bowl combine ground beef, cilantro, shallots, garlic, ginger, chile, oyster sauce, soy sauce fish sauce, sesame oil, palm sugar, cornstarch, and peppercorns. Knead with your hands to mix thoroughly. Roll into 18 meatballs, using a rounded tablespoon of meat mixture for each.
    # Preheat oven to 350° F. Thread 3 meatballs on each skewer, threading squares of green and red bell pepper between each meatball. Place skewers in a shallow baking pan.
    # Bake meatballs for 10 minutes. Reset oven to broil. Brush meatballs with glazing sauce. Set pan about 3 inches from heat source. Broil for about 2 minutes on each side. Serve.
