FOR FRUIT COMPOTE: In a medium saute pan, bring juices to a boil. Add remaining ingredients except for mint and cook until fruit is soft. Add mint. Set aside.
FOR FRENCH TOAST: Combine ground flaxseed, apple butter, soymilk, nutmeg, cinnamon and salt in a blender container and mix until smooth. Transfer to a shallow pan.
Heat in a large saute pan over medium and add canola oil. Dip both sides of bread into soymilk mixture and transfer to hot pan. Repeat for remaining slices. Cook until golden brown on both sides.
TO SERVE: Reheat fruit compote and serve 1/4 cup with one slice French toast.
NOTE: Flaxseed can be found in most health food stores. Flaxseed can be ground in a (clean!) coffee grinder.
