      RECIPE TITLE "Flax Seed Apple Butter French Toast with Fruit Compote Recipe"

    This unusual, but delicious recipe for a breakfast classic has no milk or eggs. Instead, flaxseed and soymilk are combined to make a "custard" which is seasoned with apple butter, cinnamon and nutmeg. The result is a delicious alternative, with added fiber, no cholesterol and much less fat!

      RECIPE INGREDIENTS

    For Fruit Compote:
    1/4 cup orange juice
    1/4 cup pineapple juice
    1/4 cup diced pineapple
    1/4 cup peeled and diced apple
    1 mint spring, chopped
    1 teaspoon grated orange peel

    For French Toast:
    1 tablespoon ground flax seeds
    3 tablespoons apple butter
    3/4 cup soymilk
    A pinch of nutmeg
    A pinch of cinnamon
    A pinch of salt
    1 teaspoon canola oil
    4 large slices multigrain bread (about 3/4-inch thick)

      RECIPE METHOD

    FOR FRUIT COMPOTE: In a medium saute pan, bring juices to a boil. Add remaining ingredients except for mint and cook until fruit is soft. Add mint. Set aside.

    FOR FRENCH TOAST: Combine ground flaxseed, apple butter, soymilk, nutmeg, cinnamon and salt in a blender container and mix until smooth. Transfer to a shallow pan.

    Heat in a large saute pan over medium and add canola oil. Dip both sides of bread into soymilk mixture and transfer to hot pan. Repeat for remaining slices. Cook until golden brown on both sides.

    TO SERVE: Reheat fruit compote and serve 1/4 cup with one slice French toast.

    NOTE: Flaxseed can be found in most health food stores. Flaxseed can be ground in a (clean!) coffee grinder.
