      RECIPE TITLE "STUFFED FRENCH TOAST"

    yields Serves 2 time--- difficultyeasy

      RECIPE INGREDIENTS

    4 3x3-inch slices sourdough bread, 1 inch thick
    2 bananas, peeled

    1/3 cup sugar
    1 teaspoon ground cinnamon
    3 eggs
    1/2 cup milk
    1 teaspoon vanilla extract

    vegetable oil for deep frying

      RECIPE METHOD

    Insert small sharp knife in 1 side of each bread slice. Cut arc to form pocket, leaving 1 inch border. Halve bananas crosswise and then length- wise. Stuff 2 pieces into each bread slice. Mix sugar and cinnamon in small bowl; set aside. Whisk eggs, milk and vanilla in shallow glass dish. Add bread slices and soak until saturated, turning once, about 10 minutes. Meanwhile, heat oil in heavy large saucepan to 350 degrees. Add 2 bread slices and cook until golden brown, about 1 1/2 minutes per side. using slotted spoon, transfer to paper towel-lined tack. Repeat with remaining slices. Sprinkle with cinnamon sugar.
